A homemade hazelnut cream, which is made by whisking hazelnuts. Easy to prepare, cheaper and healthier than those from the supermarket.
- 1/2 cup of whole hazelnuts.
- 1/2 cups of whole milk.
- 3/4 cup powdered milk.
- 1 tablespoon of mild flavor honey.
- 1 pinch of salt.
- 1 cup overflowing dark or semisweet chocolate in chunks.
- 1 cup of milk chocolate or chocolate chips.
On a rimmed baking sheet, toast the walnuts at 205ºC for 10 minutes. Transfer them to a kitchen towel and rub them to remove as much of their skin as possible.
Then put them in a food processor and mix them until they go from finely ground to pasty and coarse, like natural peanut butter.
Meanwhile, heat the milk, powdered milk, honey, and salt in a small saucepan just until it starts to boil. Remove from heat. Put the chocolate in a bain-marie or melt it in the microwave for seconds to avoid burning it.
Add the melted chocolate to the ground nuts and continue to process the mixture, stopping to scrape down the sides of the bowl as needed. Add the warm milk mixture until everything is well mixed and as smooth as you can get. Makes about 2 cups.
